This exceptional Grade 1 natural comes from the famed Hambela district in Ethiopia’s Guji zone — a region celebrated for producing some of the country’s most expressive and high-scoring coffees. Smallholder farmers cultivate heirloom varieties at high altitude, handpicking cherries at peak ripeness before delivering them to local processing sites known for precision and innovation.
This lot undergoes a “wine process” natural, where cherries are dried slowly under carefully monitored conditions to replicate the depth and complexity found in long-fermented wine grapes. The extended drying, controlled airflow, and frequent turning allow sugars to concentrate and aromatics to intensify while preserving remarkable clarity.
The result is a bold, fruit-forward and deeply aromatic expression of Guji — layered, intense and unmistakably premium.
